Meatless Raw Vegan Sausage

Equipment

  • food processor; slicing blade
  • dehydrator
  • spatula

Ingredients

  • 1 c walnuts; raw soaked for 8 hours
  • 1/2 c sunflower seeds shelled
  • 1/4 onion; red diced
  • 1/2 c cilantro; fresh rough chopped
  • 1/2 c parsley; fresh rough chopped
  • 1/8 tsp black pepper
  • 1/4 c noma shoyu raw soy sauce
  • 1/4 c maple syrup / honey / agave / coconut sugar
  • 3 Tbs fennel
  • 1 Tbs crushed red pepper flakes

Instructions

  • Add alll ingredients to the food processor and pulse until things are incorporated.
  • If making ground sausage, crumble the mixture on the dehydrator sheets lined with teflex and sprinkle the sausage mix out evenly in crumbles. 
  • If you would like to make some meatballs, make 1" balls and add to the dehydrator.
  • Dehydrate at 104° for 4 hours.
  • Flip the sausage over after 4 hours and dehydrate for another 4 hours or until it is dry.  Try not to over dehydrate or it becomes too hard. 
  • Add to pizza, pasta, or eat by itself as a snack! ENJOY!
