Mac & Cheese Sauce / Nacho Queso

Equipment

  • Vitamix or Blendtec high powered blender
  • spatula
  • large pot

Ingredients

CHEESE SAUCE

  • 1 Cup purified water; cold
  • 3.5 oz cashew cream SEE RECIPE
  • 3 Tbs nutrtitional yeast
  • 1 Tbs potato starch
  • 1 tsp turmeric
  • 1/2 Tbs garlic powder
  • 1/2 tsp crushed red pepper flakes
  • 1/2 Tbs Himalayan sea salt Himalayan
  • 1 tsp lemon juice
  • 1/4 Cup grapeseed or avocado oil; unrefined expeller pressed
  • 1 Tbs real maple syrup real

Instructions

MAKING THE CHEESE SAUCE

  • Add all ingredients to the blender in the order listed.
  • Blend on high until smooth. Stop and scrape the sides of the blender. Put the lid back on and blend again.
  • Set the stove to medium heat and pour the blender ingredients into the large pot.
  • Cook for 5 minutes and stir frequently go so it doesn't stick to the bottom. If multiplying this recipe you will need to cook for longer. Keep stirring and checking often as not to burn.
  • Turn off the stove top and remove from the heat.

Notes

May be added to Mac & Cheese, Nachos, spread on crackers or used as a really tasty dip! ENJOY!!
