Equipment

  • high powered blender; Vitamix or Blendtec
  • silicone spatula
  • small glass jar w/ lid

Ingredients

  • 1 c strawberries fresh & ripe or thawed from frozen
  • 1/4 c real maple syrup
  • 1/4 c purified water; cold
  • 1/2 tsp xanthan gum
  • 1 tsp beet powder
  • 1 T liquid stevia (optional - for added sweetness)

Instructions

  • Thaw strawberries if frozen, or wash and remove stems if fresh.
  • Add all ingredients to the blender and blend on high for 3 minutes (or use the soup setting on the blender). This will allow for the ingredients to blend and incorporate as well as gently heat up a bit.
  • Pour into a glass jar and then allowed to cool before putting the lid on.
  • The syrup may be stored in the refrigerator for up to 5 days, or frozen for up to 3 months.
  • TIP: A needle-less baby syringe is an easy way to decorate desserts using this syrup.
