
Apple Spinach Salad
Course: Salad, Salad Dressing, Side Dish
Ingredients
DRESSING
- 3 T extra-virgin olive oil
- 2 T apple cider vinegar
- 1 tsp Dijon mustard
- 1/2 tsp honey; pure raw
- 1/4 tsp Himalayan sea salt
- 1/8 tsp freshly cracked black pepper
SALAD
- 5 oz spinach baby leaves, about 5 packed cups
- 1 large apple cored and thinly sliced, about 1 1/2 cups
- 4 oz vegan feta cheese crumbled - about 1 coup
- 1/2 c walnuts; raw toasted and coursely chopped
Instructions
DRESSING
- Whisk or shake together the DRESSING ingredients
SALAD
- Add the spinach to a mixing bowl and toss gently to coat in the dressing.
- Add the apple, vegab feta, and walnuts and toss gently again to combine. Serve immediately. ENJOY!!
