Summer Fruit Salad

Ingredients
- 1/2 tsp orange peel zest grated
- 2/3 c orange juice
- 1/2 tsp lemon grated zest
- 1/3 c lemon juice
- 1/3 c coconut sugar
- 1 tsp pure vanilla
- 2 c pineapple 1 1/2" cubes
- 2 c OG strawberries fresh; hulled and sliced in half
- 3 kiwi peeled and sliced
- 3 banana sliced
- 2 oranges or mandarin cuties peeled and sectioned
- 1 c grapes; seedless
- 2 c blueberries
Instructions
- Bring orange juice, lemon juice, coconut sugar, orange zest, and lemon zest to a boil in a saucepan over medium-high heat. Reduce heat to medium-low, and simmer until slightly thickened, about 5 minutes. Remove from heat, and stir in vanilla. Set aside to cool.
- Layer the fruit in a large glass bowl or platter. Pour the cooled sauce over the fruit. Cover and refrigerate before serving.
