Summer Fruit Salad

Ingredients

  • 1/2 tsp orange peel zest grated
  • 2/3 c orange juice
  • 1/2 tsp lemon grated zest
  • 1/3 c lemon juice
  • 1/3 c coconut sugar
  • 1 tsp pure vanilla
  • 2 c pineapple 1 1/2" cubes
  • 2 c OG strawberries fresh; hulled and sliced in half
  • 3 kiwi peeled and sliced
  • 3 banana sliced
  • 2 oranges or mandarin cuties peeled and sectioned
  • 1 c grapes; seedless
  • 2 c blueberries

Instructions

  • Bring orange juice, lemon juice, coconut sugar, orange zest, and lemon zest to a boil in a saucepan over medium-high heat. Reduce heat to medium-low, and simmer until slightly thickened, about 5 minutes. Remove from heat, and stir in vanilla. Set aside to cool.
  • Layer the fruit in a large glass bowl or platter. Pour the cooled sauce over the fruit. Cover and refrigerate before serving.
