Add all sauté ingredients to the pan on medium heat. Cook for 2 mins, stir a bit.
Add spinach and put the lid on for 1 minute. Then stir again.
Add the eggs and mix with the spatula. Mix the spinach to separate the leaves some.
Add in the remaining ingreditents and mix again.
Flip portions of the scramble as it cook, and stir often.
Once cooked quickly remove from heat and plate immediately to keep from overcooking in the pan. ENJOY!!
