Breakfast Potatoes

Equipment

  • vegetable chopper
  • rimmed baking sheet
  • silicone oil brush
  • small bowl or cup for oiling

Ingredients

  • 6 medium potatoes; red cubed
  • 2 garlic pressed
  • 1 onion diced
  • 1 bell pepper; green seeded and diced
  • 1 bell pepper; red seeded and diced
  • 3 T extra-virgin olive oil
  • 3 T unrefined coconut oil melted
  • 1 tsp Himalayan sea salt
  • 1/2 tsp black pepper fine
  • 1/4 tsp cayenne pepper

Instructions

  • Preheat the oven to 425° F
  • In a large bowl, toss all ingredients together.  Using a silicone spatula, oil the rimmed baking sheet.
  • Pour potatoes onto the rimmed baking sheet. Bake for 25 minutes,
  • Shake the pan twice.  Raise the heat to 500 degrees and bake for another 15 minutes, turning the ingredients over another time.  Potatoes should be crisp and brown.  Serve immediately. Enjoy!!
