
Tortilla Soup

Ingredients
STEP 1
- 2 T extra-virgin olive oil
- 1 onion diced
- 3 garlic minced
STEP 2
- 2 T gf all purpose flour
STEP 3
- 3 T Kirkland's No Salt Seasoning
- 4 c purified water; cold
- 30 oz fire roasted tomatoes diced, can
- 3 tsp Himalayan sea salt
- 2 2 1/2 T taco seasoning
- 1 tsp black pepper
- 1 1/2 c black beans 15 oz can
- 1 1/2 c kidney beans 15 oz can
STEP 4
- 2 c corn
- 1 T lime juice
- 1 can full fat coconut milk
TOPPINGS
- 1 c shredded vegan cheese; mozarella or cheddar shredded
- cilantro; fresh
- 4 handfuls OG corn chips
- 1 onion; red diced
Instructions
- In a large pot over medium heat, add the STEP 1 ingredients, and cook for 3-4 minutes.
- Add the flour from STEP 2 and cook for 2 minutes, stirring continuously.
- Add the STEP 3 ingredients and gently simmer for 25 minutes.
- Add STEP 4 ingredients and cook for another 5 minutes.
- Spread the TOPPINGS among all of the bowls and serve immediately. ENJOY!!
