Tortilla Soup

Ingredients

STEP 1

  • 2 T extra-virgin olive oil
  • 1 onion diced
  • 3 garlic minced

STEP 2

  • 2 T gf all purpose flour

STEP 3

  • 3 T Kirkland's No Salt Seasoning
  • 4 c purified water; cold
  • 30 oz fire roasted tomatoes diced, can
  • 3 tsp Himalayan sea salt
  • 2 2 1/2 T taco seasoning
  • 1 tsp black pepper
  • 1 1/2 c black beans 15 oz can
  • 1 1/2 c kidney beans 15 oz can

STEP 4

  • 2 c corn
  • 1 T lime juice
  • 1 can full fat coconut milk

TOPPINGS

  • 1 c shredded vegan cheese; mozarella or cheddar shredded
  • cilantro; fresh
  • 4 handfuls OG corn chips
  • 1 onion; red diced

Instructions

  • In a large pot over medium heat, add the STEP 1 ingredients, and cook for 3-4 minutes.
  • Add the flour from STEP 2 and cook for 2 minutes, stirring continuously.
  • Add the STEP 3 ingredients and gently simmer for 25 minutes.
  • Add STEP 4 ingredients and cook for another 5 minutes.
  • Spread the TOPPINGS among all of the bowls and serve immediately. ENJOY!!
