
Vegan Taco Salad

Ingredients
- 1 lb Beyond Meat
- 1 tsp avocado oil
- 2 T taco seasoning
Salad Ingredients
- 2 heads romaine lettuce chopped
- 18 OG cherry, sugar or grape tomatoes halved
- 3/4 c shredded vegan cheese; mozarella or cheddar shredded
- 1 medium avocado cubed
Toppings
- 1/2 c green onions chopped
- 2 c OG corn chips lightly broken in pieces
- 3/4 c salsa
- 1/2 c vegan sour cream
Instructions
- Heat oil in a skillet over high heat. Add beyond meat. Stir fry, breaking up the pieces with a spatula, for about 7-10 minutes, until browned and moisture has evaporated.
- Stir taco seasoning into the beyond meat until well combined. If you like, you can also add 1/4 cup water when adding the seasoning and let it simmer a bit.
- Meanwhile, combine all Salad Ingredients in a large mixing bowl.
- Add the beyond meat and a dressing of your choice. Toss everything together.
- Portion the salads out into individual bowls.
- Add Toppings to each bowl: 2 Tbs Salsa, 1 Tbs Sour Cream, heaping 1/4 c corn. chips, sprinkle of green. onions. ENJOY!
