Tahini Cookies

Ingredients
- 1/2 c tahini unsalted and smooth
- 1/2 c real maple syrup
- 1 1/4 c almond flour
- 3/4 c tapioca starch
- 1/2 tsp baking soda
- 1/2 tsp Himalayan sea salt
- 1/4 c sesame seeds; raw, white
Instructions
- Preheat the oven to 350° F, and line a baking sheet with parchment paper.
- In a medium mixing bowl. add tahini and maple syrup and use a whisk to thoroughly combine.
- Add the almond flour, tapioca starch, baking soda and salt to the mixture. Use a wooden spoon or rubber spatula to mix well.
- Place the sesame seeds in a small bowl and keep nearby.
- Scoop about a heaping Tablespoon of the cookie mixture and roll into a ball, then roll in the sesame seeds and place on the cookie sheet, spacing them 2" apart.
- Gently press down on the balls to flatten them slightly.
- Bake in the oven for about 15 minutes or until golden.
- Let cool for 4 minutes and ENJOY!!
