
Colorful Garden Salad with lemon vinaigrette

Equipment
- cutting board
- pairing knife
- medium mixing bowl
- salad tongs
- small jar
- Food Processor
- food processor; slicing blade
Ingredients
- 4 c mixed greens
- 1 persian cucumbers thinly sliced
- 8 OG cherry, sugar or grape tomatoes cut in half
- 1/4 package micro greens
DRESSING
- 4 Tbs extra-virgin olive oil
- 2 Tbs lemon juice
- 1/4 tsp sweet leaf stevia drops
- 1/4 tsp Himalayan sea salt
- 1/8 tsp black pepper
Instructions
DRESSING
- Add all dressing ingredients to a small jar and shake well.
SALAD
- Slice the cucumber using the food processor with slicer blade or a manadoline
- Slice the cherry, sugar or grape tomatoes in half using the pairing knife.
- Add the mixed greens to a medium.mixing bowl and pour the dressing over and toss.
- Portion out the salad evenly into salad bowls.
- Add the following to each salad: • Pinch of micro greens• 4-6 slices of Persian cucumber• 4 halves of cherry, sugar or grape tomatoes
- Serve & Enjoy!!
