
Creamy RAW Pesto Pasta

Equipment
- Vegetable Spiralizer
Ingredients
PASTA
- 1 squash; zucchini
- 2 Tbs extra-virgin olive oil
- 1/2 tsp Himalayan sea salt
SAUCE
- 1 c cashews; raw soaked
- 1/4 c lemon juice
- 2 Tbs unrefined coconut oil
- 1/4 onion; red
- 1 clove garlic
- 2 Tbs basil; fresh
- 1/2 tsp Himalayan sea salt
- 1/2 c purified water; cold
GARNISH
- 2 Tbs sundried tomatoes
- 1/4 c basil; fresh minced
Instructions
PASTA
- Take a vegetable spirulizer and attach the linquini insert.
- Spirulize the zucchini into noodles.
SAUCE
- Add all ingredients to a high speed blender (Vitamix/Blendtec).
- Blend until nice and creamy.
- Pour the sauce over the noodles.
- Garnish with Sundried Tomatoes & Fresh Basil.Serve and ENJOY!!
