Creamy RAW Pesto Pasta

Equipment

  • Vegetable Spiralizer

Ingredients

PASTA

  • 1 squash; zucchini
  • 2 Tbs extra-virgin olive oil
  • 1/2 tsp Himalayan sea salt

SAUCE

  • 1 c cashews; raw soaked
  • 1/4 c lemon juice
  • 2 Tbs unrefined coconut oil
  • 1/4 onion; red
  • 1 clove garlic
  • 2 Tbs basil; fresh
  • 1/2 tsp Himalayan sea salt
  • 1/2 c purified water; cold

GARNISH

  • 2 Tbs sundried tomatoes
  • 1/4 c basil; fresh minced

Instructions

PASTA

  • Take a vegetable spirulizer and attach the linquini insert.
  • Spirulize the zucchini into noodles.

SAUCE

  • Add all ingredients to a high speed blender (Vitamix/Blendtec). 
  • Blend until nice and creamy. 
  • Pour the sauce over the noodles. 
  • Garnish with Sundried Tomatoes & Fresh Basil.
    Serve and ENJOY!!
