Equipment

  • Vitamix or Blendtec high powered blender
  • spatula heat resistant
  • collander
  • large mixing bowl
  • large pot
  • large pan
  • food/chaffing/steam pan or a Pyrex or small bakeable ramikens
  • non-stick cooking spray avocado / olive oil are best

Ingredients

CHEESE SAUCE

  • 1 Cup purified water; cold
  • 3.5 oz cashew cream SEE RECIPE
  • 3 Tbs nutrtitional yeast
  • 1 Tbs potato starch
  • 1 tsp turmeric
  • 1/2 Tbs garlic powder
  • 1/2 tsp crushed red pepper flakes
  • 1/2 Tbs Himalayan sea salt Himalayan
  • 1 tsp lemon juice
  • 1/4 Cup grapeseed or avocado oil; unrefined expeller pressed
  • 1 Tbs real maple syrup real

PASTA & TEXTURE

  • 8 oz GF brown rice penne pasta 4 cups cooked
  • 1 1/2 cup shredded vegan cheese; mozarella or cheddar
  • 3 Tbs GF panko breadcrumbs
  • 4 sprays non-stick cooking spray avocado / olive oil are best
  • 3 Tbs parsley minced - for garnish

Instructions

BOIL PASTA & PREHEAT OVEN

  • Fill a pot with water 3/4 to the top, sprinkle in a little salt and begin boiling on high heat.
  • Continue by following the instructions on the pasta package, typically around 7 minutes.
  • Preheat the oven to 400°

MAKING THE CHEESE SAUCE

  • Add all CHEESE SAUCE ingredients to the blender in the order listed.
  • Blend on high until smooth. Stop and scrape the sides of the blender. Put the lid back on and blend again.
  • Set the stove to medium heat and pour the cheesy blender ingredients into the large pot.
  • Cook for 5 minutes, stirring frequently so it doesn't stick to the bottom. If multiplying this recipe you will need to cook for longer. Keep stirring and checking often as not to burn.
  • Turn off the stove top and remove from the heat.

BUILDING THE MAC AND CHEESE

  • Strain the pasta into a collander while running cool water over it. Shake and strain well.
  • Pour the pasta into a large mixing bowl.
  • Pour the cheese sauce over the pasta in the bowl. Mix with the spatula to incorporate.
  • Mix in 3/4 of the shreddable cheese. Mix to incorporate.
  • Spray the pan/pyrex/ramikens that you will be baking in with the non-stick cooking spray.
  • Fill the pan/pyrex/ramikens 3/4 to the top with the cheesy pasta mixture.
  • Sprinkle the bread crumbs and remaining shreddable cheese on top.
  • Spray the top of the pasta with the cooking spray and place on a cooking sheet.
  • Place in the oven and bake at 400° for 10 minutes.
  • Remove from the oven and allow to cool.
  • Sprinkle a little of the parsley on top for garnish and serve. Enjoy!!
