Tahini Cookies

Ingredients

  • 1/2 c tahini unsalted and smooth
  • 1/2 c real maple syrup
  • 1 1/4 c almond flour
  • 3/4 c tapioca starch
  • 1/2 tsp baking soda
  • 1/2 tsp Himalayan sea salt
  • 1/4 c sesame seeds; raw, white

Instructions

  • Preheat the oven to 350° F, and line a baking sheet with parchment paper.
  • In a medium mixing bowl. add tahini and maple syrup and use a whisk to thoroughly combine.
  • Add the almond flour, tapioca starch, baking soda and salt to the mixture. Use a wooden spoon or rubber spatula to mix well.
  • Place the sesame seeds in a small bowl and keep nearby.
  • Scoop about a heaping Tablespoon of the cookie mixture and roll into a ball, then roll in the sesame seeds and place on the cookie sheet, spacing them 2" apart.
  • Gently press down on the balls to flatten them slightly.
  • Bake in the oven for about 15 minutes or until golden.
  • Let cool for 4 minutes and ENJOY!!
