
Funky Monkey Nice Cream

Equipment
- Vitamix or Blendtec Blendtec twister jar preferred
- ice cream maker
- ice cream scoop
- silicone spatula
Ingredients
CREAM
- 3 bananas frozen
- 6 Tbs almond butter
- 1 c ice crushed - if possible
- 3 Tbs real maple syrup
MARBLING & TEXTURE
- 2 Tbs chocolate syrup see chocolate syrup recipe
- 2 Tbs caramel syrup see caramel syrup recipe
- 1/2 c pecans; raw crumbled
- 2 Tbs cacao nibs
Instructions
- Add all the CREAM ingredients to the high powered blender and blend until smooth. Use a spatula or tamper to scrape the sides and continue reincorporating the ingredients until they blend. Be careful not to get too close the blades.
- Pour the mixture from the blender into the ice cream maker and run for about 15 minutes, or until the ice cream firms up quite a bit.
MARBLING AND TEXTURE
- While the ice cream maker is running, drizzle the chocolate syrup and caramel syrup in one at a time.
- Sprinkle in the crumbled pecans and cacao nibs while the ice cream maker is still running.
- Turn machine off immediately so you can keep more of the swirls, don't ovemix.
- Remove the ice cream from the canister and serve or place in a container freeze for a bit.
- If pulling from the freezer you may need to allow 5-10 minutes for the ice cream to thaw enough to serve. ENJOY!!
