RAW Rainbow Salad with apple vinaigrette

SALAD
- 6 c spring salad mix
- 1/2 apple; red delicious
- 2 c walnuts; raw
APPLE DRESSING - main
- 1 c extra-virgin olive oil
- 1/2 apple; red delicious
- 4 Tbs apple cider vinegar
- 4 Tbs real maple syrup
- 1/8 tsp Himalayan sea salt
DRESSING - add after blending
DRESSING
Add the Dressing - main ingredients to a high powered blender and run on high until completely smooth.
Pour the dressing into a jar.
Add the chia seeds and put the jars liid on and shake. Allow 10 minutes for the dressings consistency to set up.
SALAD
Add spring salad mix to a large mixing bowl.
Spirulize the apple using a vegetable spirulizer with the spaghetti insert.
Add the spirulized apple to the salad.
Break up the walnuts and sprinkle over the top of the salad.
Pour some of the dressing over the salad. The rest may be saved for later. ENJOY!
