Rainbow Slaw

Equipment
- Food Processor with disk spindle and adjustable slicer blade
Ingredients
- 2 cup cabbage; green about 1/2 head, shredded
- 2 cup cabbage; red about 1/2 head, shredded
- 1 whole carrot shredded
- 4 oz mayonnaise of your choice
- 2 Tbs apple cider vinegar unrefined
- 2 Tbs dijon mustard
- 2 Tbs real maple syrup
- 1 tsp Himalayan sea salt Himalayan, fine
Instructions
- Cut each head of cabbage in half, then cut the half in half again and set to the side.
- Take a food processor and insert the adjustable slicer blade, set to 1/4" width.
- Add the cabbage to the food processor and shred.
- Measure out 2 cups of each type of cabbage & place in a large mixing bowl.
- Replace the blade in food processor with the fine shred blade.
- Finely shred the carrot and then add to the bowl.
- Add the cashew cream and the rest of the ingredients to the bowl.
- Mix well with tongs. Serve & Enjoy!!
