Rainbow Slaw

Equipment

  • Food Processor with disk spindle and adjustable slicer blade

Ingredients

  • 2 cup cabbage; green about 1/2 head, shredded
  • 2 cup cabbage; red about 1/2 head, shredded
  • 1 whole carrot shredded
  • 4 oz mayonnaise of your choice
  • 2 Tbs apple cider vinegar unrefined
  • 2 Tbs dijon mustard
  • 2 Tbs real maple syrup
  • 1 tsp Himalayan sea salt Himalayan, fine

Instructions

  • Cut each head of cabbage in half, then cut the half in half again and set to the side.
  • Take a food processor and insert the adjustable slicer blade, set to 1/4" width.
  • Add the cabbage to the food processor and shred.
  • Measure out 2 cups of each type of cabbage & place in a large mixing bowl.
  • Replace the blade in food processor with the fine shred blade.
  • Finely shred the carrot and then add to the bowl.
  • Add the cashew cream and the rest of the ingredients to the bowl.
  • Mix well with tongs. Serve & Enjoy!!
