G'Morning • Egg Scramble

Equipment
- pan
- silicone spatula
Ingredients
SAUTÉ
- 2 Tbs unrefined coconut oil
- 1/4 single onion; red finely diced
- 4 single bella mushrooms diced
- 1/2 single bell pepper; red diced
2nd STEP
- 2 c spinach
- 4 single eggs; OG cage free
- 1/2 tsp Himalayan sea salt
- 1/2 tsp garlic powder
Instructions
- Add all sauté ingredients to the pan on medium heat. Cook for 2 mins, stir a bit.
- Add spinach and put the lid on for 1 minute. Then stir again.
- Add the eggs and mix with the spatula. Mix the spinach to separate the leaves some.
- Add in the remaining ingreditents and mix again.
- Flip portions of the scramble as it cook, and stir often.
- Once cooked quickly remove from heat and plate immediately to keep from overcooking in the pan. ENJOY!!
