G'Morning • Egg Scramble

Equipment

  • pan
  • silicone spatula

Ingredients

SAUTÉ

  • 2 Tbs unrefined coconut oil
  • 1/4 single onion; red finely diced
  • 4 single bella mushrooms diced
  • 1/2 single bell pepper; red diced

2nd STEP

  • 2 c spinach
  • 4 single eggs; OG cage free
  • 1/2 tsp Himalayan sea salt
  • 1/2 tsp garlic powder

Instructions

  • Add all sauté ingredients to the pan on medium heat. Cook for 2 mins, stir a bit.
  • Add spinach and put the lid on for 1 minute. Then stir again.
  • Add the eggs and mix with the spatula. Mix the spinach to separate the leaves some.
  • Add in the remaining ingreditents and mix again.
  • Flip portions of the scramble as it cook, and stir often.
  • Once cooked quickly remove from heat and plate immediately to keep from overcooking in the pan. ENJOY!!
