Equipment
- Vitamix or Blendtec
Ingredients
Peanut Dressing
- 3 oz purified water; cold
- 2 squeezed limes
- 1/2 c peanut oil
- 1/4 c peanut butter
- 3 oz white wine vinegar
- 2 Tbs nutritional yeast
- 1 tsp Himalayan sea salt
- 1 tsp black pepper
- 1 Tbs ground chili paste
- 2 Tbs tamarind paste / sauce
- 2" piece ginger
Thai Salad
- 1/2 cabbage; green
- 4 onion; scallion
- 4 sprigs mint
- 1 handful cilantro; fresh
- 1 cucumber
- 1 bell pepper; yellow
- 1 bell pepper; orange
- 1 tsp black pepper
- 1 package organic tofu; firm
Instructions
DRESSING
- Add all other ingredients to a high powered blender and run on medium speed or “sauce/dip” cycle. Run until smooth and creamy.
SALAD
- Prep and cut the ingredients in the order listed, adding to a large mixing bowl.
- Cut the cucumber into thin strips the full length of the cucumber, next cut in half.
- Mince the cilantro.
- Cut the tofu into thin ¼” strips, cut the width in half.
- Cut the peppers into thin strips.
- Mix the dressing and toss lightly. Serve and ENJOY!!
