Equipment

  • high powered blender; Vitamix or Blendtec
  • large pot
  • colander
  • large bowl with a lid
  • silicone spatula

Ingredients

BLEND

  • 14 oz cashew cream Make Cashew Cream or use 4 bars of Cashew Dream Cream. (optionally) Use 1/2 lb soaked and strained cashews + 4 oz water.
  • 16 oz pure water
  • 1/4 tsp Himalayan sea salt

THICKEN / ADD PREBIOTIC STARCH

  • 8 oz pure water
  • 1/4 c arrowroot starch or acacia fiber

ONCE COOLED - ADD PROBIOTICS AND LEMON JUICE

  • 3 capsules probiotics (open and empty the powder)
  • 1 T lemon juice

(Optional) CHOOSE A PROFILE - SWEETEN / FLAVOR / COLOR

  • 1 c pure maple syrup (optional)
  • 1 T pure vanilla (optional)

Instructions

BLEND

  • Make Cashew Cream or use 4 bars of Cashew Dream Cream.
  • Add all Cashew Yogurt Base ingredients to a high powered blender. Blend on high speed until smooth and creamy, stopping to scrape down the sides as needed.

HEAT

  • Pour the mixture into a large pot and cook on medium heat for 5 minutes. Do not clean blender.

THICKEN / ADD PREBIOTIC STARCH

  • Add the arrowroot and water back into the blender. Blend on high and then pour into the pot, stirring and cooking for another 2 minutes.
  • Remove from heat and pour into a clean glass container. Allow to cool without the lid.

ONCE COOLED - ADD PROBIOTICS AND LEMON JUICE

  • Add the probiotics & lemon juice. Mix well.
  • Next either refrigerate the yogurt to chill and set, or move on to the next step.

(Optional) CHOOSE A PROFILE - SWEETEN / FLAVOR / COLOR

  • Have fun with this! I made a tasty vanilla maple, but you do you!
  • It can be fun to add powders like Butterfly Pea, Red Beet, or Turmeric for added color and nutrient boosts! Play with different sweeteners or flavor boosts.
  • Side Note: I like to build parfaits, with fruit on the bottom and granola on top! Enjoy exploring what you enjoy!
