RAW Rainbow Salad with apple vinaigrette

Ingredients

SALAD

  • 6 c spring salad mix
  • 1/2 apple; red delicious
  • 2 c walnuts; raw

APPLE DRESSING - main

  • 1 c extra-virgin olive oil
  • 1/2 apple; red delicious
  • 4 Tbs apple cider vinegar
  • 4 Tbs real maple syrup
  • 1/8 tsp Himalayan sea salt

DRESSING - add after blending

  • 3 Tbs chia seed

Instructions

DRESSING

  • Add the Dressing - main ingredients to a high powered blender and run on high until completely smooth.
  • Pour the dressing into a jar.
  • Add the chia seeds and put the jars liid on and shake. Allow 10 minutes for the dressings consistency to set up.

SALAD

  • Add spring salad mix to a large mixing bowl.
  • Spirulize the apple using a vegetable spirulizer with the spaghetti insert.
  • Add the spirulized apple to the salad.
  • Break up the walnuts and sprinkle over the top of the salad.
  • Pour some of the dressing over the salad. The rest may be saved for later. ENJOY!
