
RAW Rainbow Salad with apple vinaigrette

Ingredients
SALAD
- 6 c spring salad mix
- 1/2 apple; red delicious
- 2 c walnuts; raw
APPLE DRESSING - main
- 1 c extra-virgin olive oil
- 1/2 apple; red delicious
- 4 Tbs apple cider vinegar
- 4 Tbs real maple syrup
- 1/8 tsp Himalayan sea salt
DRESSING - add after blending
- 3 Tbs chia seed
Instructions
DRESSING
- Add the Dressing - main ingredients to a high powered blender and run on high until completely smooth.
- Pour the dressing into a jar.
- Add the chia seeds and put the jars liid on and shake. Allow 10 minutes for the dressings consistency to set up.
SALAD
- Add spring salad mix to a large mixing bowl.
- Spirulize the apple using a vegetable spirulizer with the spaghetti insert.
- Add the spirulized apple to the salad.
- Break up the walnuts and sprinkle over the top of the salad.
- Pour some of the dressing over the salad. The rest may be saved for later. ENJOY!
